A Subzero Valentine’s Day

Happy hump day, my friends! What a cold/snowy week it has been so far. Did I mention cold?

Let’s start by recapping the weekend. I know I am a little late this week, but snow and cold really add time to the everyday routine.

Here’s the short version – it was freezing cold, we braved the elements, I discovered the value of wax paper, and we did a lot of shoveling.

And now the long version:

This beautiful display of chocolate dipped fruit and pretzels had to be painstakingly scraped off of this plate because I didn’t use wax paper, and it’s mostly the result of pure laziness. The good news though is that it still tasted great. So great that I practically ate the whole thing myself.

This is a picture documenting a day in the life of someone with self-diagnosed Raynaud’s Disease. (It’s not life threatening or excruciatingly painful so I’ve managed to avoid a doctor). If I can go a day without losing circulation in a finger or toe it’s a miracle. I need to migrate somewhere warm (and probably stop googling and see a real doctor).

Friday on my way home I witnessed this debacle. I thought maybe school buses were immune to snow up until this point, but apparently nobody is safe!

After we shoveled ourselves in to the house on Friday evening after work, I cranked up the fireplace while making dinner and watching The Notebook. That’s when I glanced over and caught someone enjoying the heat wave. #busted

 From there things only got colder. Saturday night we braved the elements and went out for a dinner date in Lewiston at a restaurant called Casa Antica.  Lewiston is such a neat place, and this restaurant is phenomenal.  I’ve raved about it before for Kris’ birthday dinner.
When we woke up on Sunday morning it was -17 degrees. So extreme precautions were taken:

She’s such a good sport (most of the time).

5 Things About the Weekend

Good morning!  This weekend was one of those rare weekends that everything just comes together.  My family took a trip up to the Great White North to visit us and although I failed at taking many quality pictures, I did capture a few things that made me happy about this weekend (besides sharing quality time with loved ones of course).

  1. House warming gifts in my favorite color.  I love green/blue/teal. And I love baking.  And I love Valentine’s day.  So these towels and dishes from my parents were a wonderful surprise housewarming gift.
  2. Furry family members coming along for the road trip
  3. Brunch! We tried a new-to-us restaurant on Sunday morning to celebrate my sister’s birthday and the food was incredible.  The restaurant was called Trattoria Aroma, and if you’re ever in the north towns of Buffalo it’s definitely worth the stop.


  4. Valentine’s Day cookies.  I made these sugar cookies and they are the BEST cookie recipe I think I have ever tasted.  I would argue that they give Eat n’ Park a run for their money.  And they’re easy to decorate with this royal icing recipe.img_4978
  5. Engagement picture canvases.  I found a Groupon and got an awesome deal on these canvases from canvasonsale.com.  They came in the mail on Saturday and I was so pumped to get them up.  (The canvases turned out awesome and the picture quality was great… but does anyone actually pay the full prices listed on that site??).img_4982

And on that note, I suppose it’s back to the grind.  Do we really have the Monday already?

Valentine’s Day + Cupid’s Chase 5k

Good morning!  I can’t believe how fast the weekend is going.  Time flies when you’re having fun, I guess!

Friday evening started with a nice big glass bottle of wine.  This was the first time I tried this Mountain Merlot (I am totally guilty of buying based solely on the bottle design and name) and it was delicious.  Even though I only had a 4 day work week, it seemed like the longest week ever.


As evidenced by the fact that I tried my hardest to “uncork” this screw-off wine top.  (oopsie) But hey, I was on a mission – I was getting in there one way or another.


I’m not usually one to brag, but I feel like I would be doing the flowers an injustice if I didn’t show the beautiful Valentine’s Day bouquet Kris sent me at work on Friday.  It was a very unique mix of flowers and I really liked the arrangement (communityflower.com coming through clutch).  I used to get really embarrassed about the attention that usually comes with receiving flowers at work, but I seem to have gotten over it real fast. 🙂


Saturday morning we bundled up and headed into downtown Pittsburgh to run the Cupid’s Chase 5k (check that one off the races to complete in 2015 checklist).  I actually didn’t even check the temperature but I would guess it was in the low 20’s (the warmest it will be here for a couple days) and it was snowing.  To be honest it was a little dangerous… the snow was coming down and the trail was covered so it was a little slick in some places.  But we finished in around 31 minutes and we didn’t even stop to walk once (our best yet)!


For dinner we decided to try a new-to-us Italian restaurant Sarafino’s.  The restaurant isn’t very big, but we arrived just in time to get a table for two.  The atmosphere was very warm and inviting and it was the first time either of us have gone to a restaurant that is BYOB.  We brought a bottle of pinot noir and started with some warm bread with dipping oil and the goat cheese bruschetta appetizer:


For my main course I got the “Pasquale’s” – a yummy mix of penne pasta with sun-dried tomatoes, pine nuts, mushrooms, feta cheese, and spinach. (Kris got the “Sarafino’s” and it was delicious as well).


If you’re looking for a small Italian restaurant that is off the beaten path, I would highly recommend it!

On the agenda today – probably a lot of hibernating and chocolate chip cookies.  It is cold out!!

Valentine’s Day Desserts that Won’t Break the Calorie Bank

This year I am totally one of those people who is all about Valentine’s day; but to be fair I really love any excuse to celebrate.  I know for some of us it is an awesome reason to celebrate our love, and for others it’s a day of some unwanted reminders.  But the one thing that everyone has in common for Valentine’s day is the abundance of sweet treats!  So I bring you a list of different options to enjoy without breaking the calorie bank:

1. Chocolate covered fruit

Not only is this option healthy, but it’s also super easy.  Step 1 – buy fruit, Step 2 – buy microwaveable dipping chocolate, Step 3 – follow instructions to heat chocolate, Step 4 – dip and put in freezer until dry on a sheet of wax paper.

2. Chocolate covered pretzels

Repeat same steps as above, but with pretzels.

3. Strawberry shortcake

This one is as simple or difficult as you want to make it. Ingredients: shortcake, strawberries, whipped topping.  If you want to make your own shortcake, here is a great recipe from Cooking Light.  But if you’re short on time, a simple angel food cake from your local grocery store will also do the trick.

4. Cherry Chocolate Chip Ice Cream

Full disclosure – I have not made this recipe.  However, it looks delicious and the fact that you don’t need an ice cream maker to make ice cream? I am sold.

5. Strawberry Icebox Cake

I pinned this recipe a while ago, and it looks delicious and light.  The perfect combination


6. Rice Krispie Treats with Valentine sprinkles

You can’t really go wrong with this traditional treat.  Add some cute Valentine’s sprinkles and enjoy!

7. Oatmeal chocolate chip cookies

These oatmeal chocolate chip cookies would be a delicious Valentine’s day snack.  There is never a bad time to make chocolate chip cookies.

Breaking the Rest Streak

I’m feeling a little guilty that I slept in again today, although it felt great to get some extra sleep.  I did so good last week, and then I got completely derailed over the weekend.  Somehow I need to put a stop to unproductive weekends, but I’m trying not to beat myself up too much over it.

Last night I almost went to the gym.  I actually drove to the gym, circled the parking lot a few times, couldn’t find a spot, and went home to paint my nails and eat some comfort food instead.  It was so freaking cold out, can I hibernate until Spring?  I was really feeling the love for Valentine’s day when I painted my nails:


I swear my picture taking abilities don’t do anything justice.  I love my gel manicure kit and any reason to celebrate pretty much anything.  You have to admit that Valentine’s day has the cutest decorations (heellooooooo, Target).

For dinner I had leftovers from Monday night which was a small piece of buffalo chicken cordon bleu and roasted asparagus. Kris was in charge of dinner Monday night and it was amazing, sadly I did not take a picture to share though.  After the small portion of leftovers I was still feeling hungry and I have been completely obsessed with making my own mac n’ cheese lately:

Easy Mac n’ Cheesy



– Cheese of your choice

– enough milk to cover the bottom of the bowl (add more if desired)

– whole grain pasta

– salt & pepper


Mix ingredients in bowl. Microwave for a minute, stir, repeat until all cheese is melted. Enjoy!

This morning I’m running a little late so I stuck a lemon slice in my water and grabbed an English muffin and some PB to go.


Lunch is the last of the cheeseburger casserole leftovers with a kiwi (or 2)


And my afternoon snack is a key lime Chobani!
