Baked Salmon with Guac & Baby Bok Choy

Lately I have been making an effort to eat less processed foods around here. So when I did my meal planning for this week I quickly realized that many of the recipes that fit that criteria can get pretty time consuming.  So I tried to find things that were fairly quick and easy, but packed with natural nutrients and ingredients that would satisfy our hunger.

Over the weekend I made the more time consuming meals, but to be honest, with the crockpot it wasn’t too terrible.

Last night’s dinner was inspired by this salmon and avocado salsa recipe.  I really didn’t change too much, but I used sesame oil on the salmon along with the spices, and added cherry tomatoes to the avocado salsa instead of the jalapeños (I couldn’t find them at the store, I’m actually a little disappointed about this).

I also added baby bok choy to the mix, mostly because I bought it at Trader Joe’s last week on a whim and I figured this meal could use a side of greens.  I have actually never had baby bok choy before (at least that I can remember), and I was a little nervous when I googled a recipe and saw that it was also referred to as Chinese cabbage.  So I decided to play it safe with a 5 star recipe, that basically smothers it in butter and garlic and it turned out pretty good!

This dinner is definitely a make again.

On the exercise front, (in typical Shae-fashion), I signed up to participate in Pile on the Miles and then kind of changed my exercise approach.  With it getting dark out so early (and colder), I don’t feel very comfortable logging tons of miles, so I’ve decided to run shorter distances and try to work on my speed.

Night time running is so peaceful and creepy all at the same time.  If I hadn’t seen a coyote run across the road on my way to work one morning I probably wouldn’t be such a baby.  (Ok, I might.)

Last night I logged 3 miles and I felt really good (maybe all the food prep is paying off??).  My time was nothing impressive, but it was still an improvement for me.

BBQ Salmon BLT Salad & Sore Legs

Hola! I hope everyone can share in the sentiment that comes with a short week… so let’s just call this Tuesday – Wednesday.

Yesterday was a busy Monday.  After I got done with work I came home to let the little Beester out and play a pretty intense round of ball while waiting for Kris to get home from work.

I bought a Pure Barre Groupon last week and I was looking forward to going to my first class today, but to be honest my legs were too freaking sore.  I went to buffaloBARRE on Saturday and having never done a barre workout before coupled with a few weeks of slacking – my legs could not deal.  We’re talking – sore to the touch, almost limping when I stand up – sore (embarrassing).

So instead we all went for a short run around the neighborhood.

B’s favorite place to be in the entire world is right between Kris and I.  You think I’m kidding… but she squeezes right between our legs if we even hug each other.

After the run I made a super yummy salmon salad.  I don’t think I’ve chosen a recipe yet from Iowa Girl Eats that we haven’t marveled over for the entire meal.  The recipe wasn’t overly difficult or time consuming either which was a major selling point.

After the dinner clean-up I made a cup of mint tea, watched some of the Voice, and hit the sheets!

Today on the agenda –

1. Work (happy closing to all of my fellow Accounting nerds out there)

2. 6 mile run.  I hope the weather is going to be nice today, I can’t handle another snowy, rainy day!  On a side note, I’m fairly convinced we are living in an arctic tunnel – holy crap that wind is cold.  Imagine a beach breeze… but in Alaska.  That’s what our neighborhood feels like.  I’m sure I will be appreciating this flat ground when summer rolls around, but right now it’s just painful.

Teriyaki Salmon with Brussels Sprout Slaw & Quinoa

Good morning!  Last night after a hot yoga class, I made a delicious salmon recipe.

When I went grocery shopping on Monday I came across this huge frozen salmon filet.  So when I got home I put it in the refrigerator to let it thaw for a day.  I knew I wanted to make a super simple recipe.  So I opted for a pre-made marinate.

That’s when I found this Asian Teriyaki Sauce, and I knew it would be a good match.

Yesterday when I got home from work I placed the salmon in the glass baking dish above and doused it in teriyaki sauce.  I covered it and placed it back in the fridge for about 2 hours to marinate while I went to yoga.  When I got home I heated the oven to 450F and tossed it in for 15-20 minutes.

While it was baking, I made some brussels sprout slaw, and cooked some quinoa with chicken broth in place of water.  Easy peasy!  And the best part?  There are leftovers so I won’t have to cook again tonight!

This morning for breakfast I had the usual whole wheat English muffin with Justin’s Vanilla Almond butter + 2 kiwis

I’m feeling extra hungry today so I may also add a side of tortilla chips and a laughing cow cheese wedge.

Workout – I’m hoping to get 6 miles in today on the treadmill. We’re getting more snow today… please let the weather break soon!!  I am so ready for spring!
