Adult Snow Days + Mangos

Good morning! I set my alarm early today to make it to a morning spinning class, but I didn’t make it very far.  While I was successful pushing myself to get out of bed, I couldn’t bring myself to make it past my overflowing laundry basket.  Do you ever find yourself wishing you had adult snow days… just so you could clean?  Maybe it’s just me.

Maybe I could have done something useful last night while I was watching Shameless.. and Girls.. and Revenge… and The Bachelor.  But once I hit the couch for the evening I am done for.  So, to make a long story short… I skipped the am spin class, got over the fact that I don’t get snow days (kind of), and decided to do laundry, dishes, and meal prep at 5:30am.  Hopefully I can squeeze in a short run later today.

On the bright side, I picked an awesome mango at the store the other day.  Mangos are one of those ominous fruits that many people don’t know what to do with (I was one of them).  They have an awkward seed right in the middle and you have to whittle it down to get all the good stuff.  So if you’re unsure of how to cut a mango, follow along with my pictures below:

While I was feeling ambitious (and had the peeler out), I also prepped a kiwi.  I’m going to have one awesome afternoon snack today!

I always have to be extra careful not to squish the kiwi in my hand when I’m peeling it.  I’m not sure if that’s a normal problem to have or if I just need a new peeler?  But the struggle is real.

The meal lineup for today is:

Breakfast – whole wheat English muffin with almond+chia seed butter and raspberry jam

Lunch – Grilled chicken kale salad with roasted potatoes, mushrooms, tomatoes, Frank’s Red Hot + balsamic vinegar

Snack – Green tea with that beautiful fruit and some cottage cheese

Hump Day Happenings

Happy hump day! We’re just about half way through another week and hopefully fending off the January blues.  If you’ve never heard of Blue Monday, it is a Monday in January that is supposedly the most depressing day of the year.  2015’s Blue Monday is supposed to be January 26th, but I would argue it might have been Monday the 12th.  Man, it was hard getting back to the grind this week, but on the bright side hopefully that means it’s only up from here!

This morning I kicked off hump day with an EFX class and now I’m back sipping my lemon water and preparing to devour this delicious breakfast:

I mixed some Chex instant oatmeal with 1% milk, then added a spoonful of almond + flax seed Barney Butter, and a small sliced up banana:

mmmm.  Then I fried up an egg for good measure.  On Monday I had made coffee at home, which I normally don’t do on weekdays.  I usually get to work and take advantage of the Keurig, but I really enjoyed iced coffee while I got ready in the morning.  So I made a bigger batch and put what was left in the fridge for mornings this week…. best idea I’ve had in a while.

For lunch today, I packed up some leftover orange chicken and rice with a side of broccoli

We’re only 2 days away from Friday night and pizzaaaa.  I think we’re putting Mexico on hold this Friday and going back to our roots.  On a side note – I went to a spinning class last night and thought about pizza for the entire first half of the class…the second half I spent wondering if there is something wrong with me.

Thursday Spinning Class and Meal Planning

Hi there! I hope your Thursday is off to a great start.  This morning I rolled out of bed bright (cold and dark) and early for a spinning class.  And boy, did it kick my butt.  Or more specifically, the instructor kicked my butt.  This is the second time I have gone to her class and she is fierce. The 45 minute spinning class feels a bit like a boot camp.  She’s a tough cookie with a ‘no excuses’ attitude, and just when I thought we had survived the class and cooled down she made us end with 20 pushups.  So obviously, I want to go back next week. 🙂

Last night I had a hair appointment after work and was starving afterward so I stopped at Jimmy John’s for a Turkey Tom with onions and hot peppers.  It hit the spot. (And yes, that’s desperation at it’s finest… sitting on the floor in front of the tv pounding a sandwich.  But it felt so right.)

I keep a small stash of mom’s Christmas cookies and biscotti in my freezer for emergencies… so I ended the evening with a piece of double chocolate biscotti. Heaven.

And now I am enjoying my favorite part of the morning: watching the news, eating breakfast, and updating this wonderful space on the internet. Breakfast this morning consisted of a fried egg, half of a grapefruit, and half of an English muffin with Chia Almond butter and jam:

I know, my pictures aren’t pretty… but I promise it was delicious.

Lunch is going to be a real surprise… another chicken salad!

Last night Kris asked me if I was ever going to eat anything else ever again…. I guess that might be a sign that it’s time to switch it up.  So you will be happy to know that I used up the last of the ingredients today.

For a snack I have packed a sliced apple with some broccoli, celery and hummus for dipping.

Now to get to work and make some coffee (my second favorite part of the day).  I hope your day is off to a good start!

Monday Meal Plan

Breakfast

1/2 Wolferman’s English muffin with Justin’s Vanilla Almond butter and small glass of OJ.  And of course, coffee when I get to work.

These English muffins are so good. Kris received a variety pack of them as a Christmas gift and I have a feeling I know who will be eating them all…

Lunch

Kale salad with dried cherries, walnuts, a slice of Trader Joe’s smoked gouda (broken into small pieces), with a drizzle of olive oil and balsamic vinegar.

This is my go-to detox lunch. I am in much need of some detoxing.

Snacks
