Proscuitto Caprese Salad + WWWP5K

Yesterday in an attempt to detox from all of the fish n’ chips and beer consumed in London, I created this salad.  It is fresh, filling, and it tastes great! I made it again for lunch today and I’m looking forward to it. Gotta love days that you look forward to your lunch!

Proscuitto Caprese Salad

Ingredients:

  • Greens of your choice (I used Spring Mix with Herbs, and it added a little extra flavor dimension)
  • 1 roma tomato, diced
  • 1 slice of fresh mozzarella, diced (approx 1/5 of the cheese ball below)
  • 2 slices Proscuitto
  • salt & pepper to taste
  • drizzle of olive oil & balsamic vinegar

After work I hit the road around our neighborhood for the Automatic Worldwide WP 5k 2015.  I came across this blogger challenge yesterday afternoon and thought it was such a great idea.  I was also pretty happy with my time considering I hadn’t run in a week and ate all the food in London.

Don’t mind the time on my Fitbit… I started timing my workout and then didn’t leave the house for about 45 mins. (And yes, I’m that obsessed weirdo wearing both a Garmin and a Fitbit just to go for a short run.)

Dinner was a pan fried chicken sandwich topped with mayo, tomato, red onion, & baby spinach.  And since it’s getting cold out and we needed some comfort food, we paired it with my favorite Trader Joe’s soup.

Butternut Goat Cheese Salads

I actually found this little gem in my drafts from August and although, it’s actually not what I’m having for lunch this week, it is perfect for the season!  (And it was delicious).

Ingredients:

If you’re in the market to spice up your lunches and celebrate the season, definitely give it a try.  I would also like to try it with pomegranate seeds instead of the craisins.

I put these on a chicken kale & wild rice salad last night and it was glorious.  I also squeezed in a 6 mile run with the Queen B and made enough salads for lunches the rest of the week. Success!

No regrets.  They kind of remind me of Apple Jacks or something, but pumpkin.  If that makes sense? Definitely worth a try.

Pizza Monster

Alternate titles for this post could be I Have No Self Control Around Pizza or What I Ate Wednesday.

Yesterday started out like any other.  I got up, finished my morning routine, got out the door and went in to work.  Here’s a little glimpse of my day:

Breakfast

I know some people may have an aversion to the consistency of this.  It’s not very thick, but the I love the taste.  It’s hard to find nut butters that don’t have a bunch of added junk.  This one is 100% almonds, so I forgive the texture.

Coffee (yes, I consider this it’s own meal category)

Lunch

Leftover acorn squash with a side of Trader Joe’s pita chips and Beet Hummus.  And of course a carbonated water that I’m sure someday we will find out is way too good to be true.

Side note – I’m a little disappointed no one at work has noticed this mug.  It’s a real statement piece.  And it wasn’t easy for me to sneak it out of the house unnoticed.

Snack

I have been on an ‘Oh My Yog!’ kick lately.  I can’t get enough of the creamy deliciousness.  I’m hoping Stonyfield will come out with some new flavors soon. My favorite is the Vanilla.

Workout

After work I went straight to a Hot Yoga Power Hour.  It feels so great to be back at it, I really missed yoga in my life.  And I can’t believe how weak I have gotten in the few months that I have taken off.  My arms are on the super struggle bus for every sun salutation.  And let’s just say attempting any sort of head stands or fancy-ness are completely on the back burner until I can work up some strength.

After yoga, I came home and took the Busy B for a nice long walk.

I hit my 10,000 step goal, and the Queen B had a nice little outlet.  We even stopped to check out the geese bedding down for the night in the pond nearby.

Dinner

When we got back Kris was home with a huge pepperoni pizza. mmmmmmm.  I was already halfway through my slice of pizza before I remembered to take a picture.  These pizza slices from the Amherst Alehouse are massive.  I planned to eat one slice and exercise some sort of self control, but by the time it was all said and done I had 2 slices of extra large pepperoni pizza and 1 chocolate chip cookie.  And it. was. glorious.

On that note, I guess I better get to preppin’ something healthy for todays meals.  Happy Hump Day!

4 Miles and Eggplant Parmesan

Yesterday was a long day filled with work, running, and cooking.

After work I came home for a 4 mile run.  The little Beester came with me for 2 of them, but it was way too hot and humid, especially for a pup to be logging the miles.

(I swear I tried to lighten up this picture, but my efforts were futile.  It took me about 39:20 to run 4 miles.  Not my best time ever, but I’m generally happy if I average under 10 minute miles.)

I hadn’t run in a while and I felt surprisingly good.  There’s nothing better than a run that feels good both mentally and physically.  I wasn’t even counting down the miles, which has felt rare lately.  After my run I chugged some dark chocolate almond milk while I looked up a recipe for dinner.  I think I could easily drink that whole carton in 2 servings.  It is heavenly.

I had an eggplant that needed to be cooked but I didn’t want to spend hours in the kitchen making eggplant parmesan, so I did a little research and came up with this Whole Foods Market recipe.  It was still a decent amount of work, but it was easy enough and it turned out delicious!

I actually had some broccoli on hand so I decided to make the broccoli side as well (recipe is also included in the Whole Foods link).

Dinner was a success!  And lunch will be leftovers.  Happy hump day!

You Know you Need A Motivation Monday When…

Yesterday morning as I was sitting at my desk, sulking in my Monday blues, I decided it was a good time to do some organizing which happened to include a very large stack of papers that needed stapled back together and filed.

In the midst of my stapling frenzy, I realized that my shoulder was getting tired… From picking up a stapler and putting it back on my desk over and over. While I was feeling a little embarrassed for myself, I realized that it was a clear sign that I needed some motivation. And also that I need to re-evaluate my summer routine.

In an effort to save some money and embrace the summer weather, I quit my gym membership and came up with a handful of circuit workouts that I was going to combine with running. Well let me just be the first to admit that I have officially fallen off the wagon.

Here are some other signs that you might also need a good, old fashioned, Motivation Monday:

1. Your arms are aching while blow drying your hair (check)

2. You are embarrassingly out of breath at the top of the stairs (yep)

3. Doing one push-up feels like the equivalent of running a marathon (ugh)

4. You post a Motivation Monday post on a Tuesday (whoops)…

On the plus side, I spent all last night grocery shopping and meal planning so at least I have a plan!  Here’s what’s on the agenda today:

Breakfast: English muffin with peanut butter

Snack: Fruit!

Lunch: One of these awesome salads with baby spinach, arugula, sprouts, cucumber, tomato, bell peppers, edamame, and cottage cheese.

How to Make your Weeknights Easier

Happy hump day!  We’re moving right along this week!  I tried a little bit of a different approach to meals for the week and so far it’s making my weeknights a thousand times better.  Yesterday I shared with you my mason jar chicken salads that I prepped for lunches for the week.  All I have had to do in the mornings is brew some coffee (every other day, anyway… I usually brew a pot and put the leftovers in the fridge to make iced coffee every other morning), throw my bread in the toaster for my breakfast, and grab a mason jar chicken salad out of the fridge.

Along with the chicken salads, I also made a cheeseburger casserole so all I have had to do after work was scoop some into a bowl, pop it in the microwave, and enjoy!  I like to add the pickles and a little extra ketchup and mustard to mine to make it really taste like a cheeseburger.  I also used whole grain pasta, and it turned out super filling and delicious.

While I was working hard in the kitchen, I got really ambitious and made some chocolate chip cookies too.  A while ago my friend had given me this recipe along with instructions to replace the butter in the recipe with 1 stick of butter and 1/2 of a brick of cream cheese.  They are delicious.  If you’re looking for a little evening pick-me-up I would highly recommend them.

With meals for the day ready to go I had time to hit a hot yoga class after work, come home and eat, and spend the rest of the evening relaxing!

Lunch for the Week: Mason Jar Chicken Salads

On Sunday I decided to try an experiment for lunches this week.  I have seen a few articles online about putting salads in mason jars.  Not only does it look delicious, but it keeps your dressing on the bottom and lettuce on the top so that it doesn’t get soggy by the end of the week.  It’s also a major selling point that Ball mason jars are around $10 for a 9-12 jar pack and are made of glass.  I made traditional chicken salads for mine, but there are tons of different options out there.  This Buzzfeed article lists 18 different types of salads with links to the recipes.

Mason Jar Chicken Salads

Mason Jar Chicken Salads

Makes 8 mason jar salads.  Cut ingredients in half if cooking for one.

Ingredients:

– yogurt bleu cheese dressing

– balsamic vinegar

– 6 baby cucumbers, sliced

– 1 package sliced baby bella mushrooms

– 3 bell peppers, diced

– 2 lbs of cooked chicken breast (I used chipotle pepper seasoning on mine)

– 1 bag baby spinach

Instructions:

1. Chop and cook chicken as desired.

2. Layer the ingredients in order of the list above (first to last) so that the dressing is on the bottom.

3. Stock the fridge, grab on your way out the door, and enjoy!

I enjoyed mine with a side of fruit and a few pieces of dark chocolate.

Habanero Ranch Chicken Salads

Good morning, friends!  Today I’d like to share a little recipe that we threw together for dinner last night that turned out delicious!

Kris and I are both lucky if we can be home by 5pm on weeknights, so when it comes to dinners we like quick, healthy, and simple ingredients.  This simple chicken salad turned out great.  The only thing that took a little time was the roasted potatoes (but it’s easy to multitask while they are baking).

Habanaro Ranch Chicken Salad Recipe

Habanero Ranch Chicken Salads

Ingredients:

– 2 chicken breasts

– olive oil

– oven roasted potatoes (I used Montreal steak seasoning in place of garlic salt this time)

– lettuce (we used a spring mix with baby spinach)

– banana peppers

– ranch

– hot sauce

– 2 slices of cheese (Habanero Monterey Jack from Target, mmmmmm)

Instructions: While the potatoes are baking, grill chicken or sear in a pan with olive oil and desired seasoning.  Once chicken is cooked, melt 2 slices of cheese on top.  Top lettuce with chicken, roasted potatoes, banana peppers, and add hot sauce and ranch as desired for dressing.

Just as a side note – I cannot tell the difference between regular ranch and this Wegman’s Ranch Yogurt Dressing, which is a major win.

Warning – this hot sauce is HOT.  Use sparingly (don’t make the same mistakes I did)!

Pure Barre + Steak Salads

Happy hump day!!  I hope your week is going well, we are inching closer to Friday (thank goodness!).

Monday evening I went to my second Pure Barre class and holy crap, I am still feeling the burn.  I really enjoyed the class, even though I was shaking like a leaf the whole time.  The instructor was super nice and on my first day she told me that if I stick with it for at least 3 days a week over the next month (the length of my Groupon) I will start to see some changes… so stay tuned.

While I was at the barre class, Kris was in charge of dinner… and he nailed it.  He grilled up a steak, roasted some baby red potatoes, and sliced some veggies for a delicious steak salad.

The dressing was a drizzle of this yogurt blue cheese and balsamic vinegar (such a great combination):

Yesterday was super busy and I didn’t make my 6 mile run.  I’m struggling with adjusting to my new routine (and the still colder weather) and it’s really hindering my half marathon training.  Since I was feeling disappointed in myself, I made it a point to get all of my other items completed from my to-do list.  So I wouldn’t call it a complete bust.  Just getting random paperwork, bills, and taxes out of the way really relieves the stress that overwhelms me sometimes.

Breakfast this morning was the usual:

Last night for dinner we roasted another chicken from Wegman’s and some asparagus.  I used the leftovers to construct a chicken salad for lunch today.  In the salad: kale, baby spinach, chicken, asparagus, cherry tomatoes, cucumbers, mustard as dressing:

With a side of strawberries and a mint-lime carbonated water, and 2 pieces of Bliss dark chocolate.

Afternoon snack is a cup of tea and the usual Chobani yogurt:

Easter Sunday Detox Monday

Happy Monday!  I hope you had a wonderful Easter weekend filled with fun, family and sweets (maybe even a little sunshine??)!

On Friday afternoon we headed down to Pittsburgh for a weekend of family time and so. much. food.  Friday night we ate at Anthony’s Coal Fire Pizza and it was delicious.  I LOVE their pizza covered in arugula mmmmm.

Saturday evening we all got together for a family meal.  Mom made lasagna and everyone seemed to have desserts on the brain because we ate ALL of the desserts.

And my mom got an Angel food cake with sliced strawberries.  So I think it’s safe to say we did Easter right.

For breakfast I had my usual whole grain English muffin with 2 kiwis and almond butter:
