A Day of Eats + House Rules

Happy hump day friends! We’re half way to the weekend and things are looking up!

Today I am sharing my meals from yesterday, partially to keep me accountable and partially because it’s nice to have ideas when the usual routine gets a little old. 

Breakfast 7:30am – 1 PerfectFit protein pancake with cinnamon, maple syrup, blackberries, and raspberries. (This recipe is from the Tone It Up nutrition plan, which I finally caved and got. I plan to commit 100% and write a full review after the half marathon.)  

Coffee.

Snack 10am – 1 medium grapefruit (I forgot to take a picture)

 Lunch 12:30pm – leftover Easiest Broccoli Pasta. I’m partially following along with the Skinnytaste meal plan this week!
Green tea 1:30pm

Snack 2pm – Coconut Chia Seed Pudding  (also from the Tone It Up nutrition plan) topped with coconut flakes and cacao nibs
  

Snack 4pm – Cherry pie Larabar (forgot to snap a picture)

Dinner 7pm – Crockpot Chicken and Black Bean Taco Salad
  

I ended the evening with a mug of warm mint tea and 2 pieces of Dove dark chocolate. 

On a side note, we are currently ‘puppy sitting’ (all dogs will forever be puppies to me) for Kris’ parents for 3 weeks and we’ve had to implement some pretty strict house rules for these houligans… 

  
  

It’s sad how much of a kick we get out of our new little catch phrase.

Vegetarian Enchiladas

This week I decided to go out on a limb and attempt one vegetarian dinner (that was not pasta) and I actually killed two birds with one stone. Not only did I find an awesome recipe, but I used up mostly ingredients that I already had on hand. 

 
The only supplies I had to buy were enchilada sauce, cilantro, avocado, and green onions. The rest I had in the pantry or leftover in the fridge just waiting for the right recipe to come along. 

I found this recipe for vegetable enchiladas  from epicurious and followed the recipe pretty closely. 

The only thing I omitted was the rice, and I used leftover roasted sweet potatoes from Tuesday’s dinner. Then I topped with sour cream, chipotle salsa, and some salsa verde. 

B dog was there for moral support… 

 

These babies are best prepared with a margarita (or three).

Pizza Monster

Alternate titles for this post could be I Have No Self Control Around Pizza or What I Ate Wednesday.

Yesterday started out like any other.  I got up, finished my morning routine, got out the door and went in to work.  Here’s a little glimpse of my day:

Breakfast

1 slice of whole wheat bread with Trader Joe’s Raw Almond Butter

I know some people may have an aversion to the consistency of this.  It’s not very thick, but the I love the taste.  It’s hard to find nut butters that don’t have a bunch of added junk.  This one is 100% almonds, so I forgive the texture.

Coffee (yes, I consider this it’s own meal category)

Lunch

Leftover acorn squash with a side of Trader Joe’s pita chips and Beet Hummus.  And of course a carbonated water that I’m sure someday we will find out is way too good to be true.

Side note – I’m a little disappointed no one at work has noticed this mug.  It’s a real statement piece.  And it wasn’t easy for me to sneak it out of the house unnoticed.

Snack

I have been on an ‘Oh My Yog!’ kick lately.  I can’t get enough of the creamy deliciousness.  I’m hoping Stonyfield will come out with some new flavors soon. My favorite is the Vanilla.

Workout

After work I went straight to a Hot Yoga Power Hour.  It feels so great to be back at it, I really missed yoga in my life.  And I can’t believe how weak I have gotten in the few months that I have taken off.  My arms are on the super struggle bus for every sun salutation.  And let’s just say attempting any sort of head stands or fancy-ness are completely on the back burner until I can work up some strength.

After yoga, I came home and took the Busy B for a nice long walk.

I hit my 10,000 step goal, and the Queen B had a nice little outlet.  We even stopped to check out the geese bedding down for the night in the pond nearby.

Dinner

When we got back Kris was home with a huge pepperoni pizza. mmmmmmm.  I was already halfway through my slice of pizza before I remembered to take a picture.  These pizza slices from the Amherst Alehouse are massive.  I planned to eat one slice and exercise some sort of self control, but by the time it was all said and done I had 2 slices of extra large pepperoni pizza and 1 chocolate chip cookie.  And it. was. glorious.

On that note, I guess I better get to preppin’ something healthy for todays meals.  Happy Hump Day!

6 Miles and A Day of Eats

Today was finally a nice day in the Great White North!  And then it promptly decided to rain the moment I left work… but at least the temps were not arctic.  So me and the Beester braved some wind and rain drops after work and got our 6 mile training run in!

We averaged under 10 minute miles so I was pretty happy with that… it does make me a little nervous though to think about adding in hills.

I tried to fuel for the run throughout the day by starting with a whole wheat English muffin topped with Almond butter and 2 kiwis on the side:

Followed by 2 cups of coffee drank throughout the morning.  Lunch was the last of the chili and cornbread with a side of black berries and a hard boiled Easter egg.  I packed those darn snap peas every single day this week and still haven’t opened them. For some reason they’re just not doing it for me… maybe tomorrow?

For an afternoon/pre-workout snack I had a cup of tea and a Chobani apple & cinnamon yogurt with steel cut oats:

Dinner was pasta with some wilted spinach and Wegman’s marinara (plus a side of wine):

Tomorrow I plan to take a barre class, do some cleaning and packing, and then we are heading down to Pittsburgh for Easter with my family!

A Few Things That are Making me Smile

Happy hump day, my friends!

Today was an odd day.  Nothing was exactly bad about it, but it felt long and exhausting and I was grateful for the little things that made me smile.  So I thought I would share them with you 🙂

1. Tomorrow is ‘Friday’

Thank goodness for the 3 day weekend, family time, and a chance to recoup.

Kris knew I was having a rough day so he graciously poured me a glass of wine when I got home.  Then he cut up all of our Easter eggs for egg salad which I ate straight out of the bowl with a side of tortilla chips and french onion dip.  I’m not proud.  Although last night I had chips, french onion dip, and jelly beans for dinner.  So I think it’s safe to say that I’ve used up all of my “new job and life, stress eating” free passes.

6. B snuggles

B always knows when I’ve had a rough day or when I’m feeling sad.  She sure knows how to press my buttons sometimes, but she always knows when I need some extra loving.  She also knows when I’m taking her picture and likes to attack the camera.  Luckily I snuck one in before the attack.  AND she ate both breakfast and dinner today!

7. Emails & texts from old coworkers/friends

8. This SNL Serial skit

If you have not listened to the Serial podcast, you need to stop what you’re doing and start listening.  And then you should probably plan to accomplish nothing for the next 8-10 hrs.  I have listened to the podcast series almost twice now, and I still can’t get enough.  It’s the best thing to happen to road trips since satellite radio  Yesterday Kris sent me the SNL skit based on the podcast and it was too good.  If you’ve listened, you have to see this:

Week 1 in Buffalo

This week was nothing short of madness.  Since a picture is worth a thousand words, I think the easiest way to share the madness is via some snapshots…

We ate lots of sugar cookies.  I finally finished icing a batch of Easter sugar cookies and I’m slowly polishing off the entire batch.  Not much thanks goes to Kris… sugar isn’t his thing so it leaves me and B with ALL of the sweets.

We celebrated small successes… like B partially ending her hunger strike. (partially.)  I’ve never met a dog that refuses to eat before, it’s so strange and stressful.

I woke up super early everyday to make time for a healthy breakfast.  We had some ripe avocados to use up so I started mashing avocado on toast and sprinkling salt and pepper on top…. it is heavenly.  I’m officially addicted.

We fried up some ground venison, mixed it with marinara sauce, and put it on top of spinach and roasted spaghetti squash.  It was delicious.  Mostly thanks to Wegman’s marinara sauce. (Side note – it would have been better if I would have cooked the spinach)

Lots of wine was drank.  Even though I am really enjoying the new gig, everyday is rough when you are just starting a new job.  So much to learn = so much wine needed.

Why is it so hard to control food intake and know what “normal” feels like when you are in the midst of a transition?  I have been so hungry and so exhausted when I get home.  Hopefully this weekend I can get a jump start on getting back on track.  But when your entire house looks like some variation of this:

It’s hard to be hopeful that the weekend will consist of anything but organizing and unpacking.  Tonight we are going out to dinner for some sushi and quality time.  Have a great weekend!

A Fabletics Purchase, A Vet Visit, & Another Missed Run

Yesterday was a roller coaster of a day.  As soon as I woke up I knew something was off with B.  When I left her she did not want to play or eat breakfast and she was whining at me like she was trying to tell me something and I just could not understand.  I feared she may be in pain, but I couldn’t pinpoint a problem.

No, no it doesn’t.  So I planned to come home at lunch and see if she was feeling any better.  She tends to get sassy and boss me around in the morning when she’s not getting enough exercise/attention, so I couldn’t rule that out.  During lunch I got her to eat most of her breakfast and take a lap around the block, but something was still off.  One/both of her back legs seemed to be bothering her, so I took pictures and videos of her walking, but still no real conclusions.

When I got home from work at the end of the day she didn’t even greet me at the door after I called her a couple times.  At this point I was terrified of what I was about to find.  I found her laying on the couch acting like she couldn’t get up (so much relief, and then worry again).  Then I was worrying that we were dealing with some sort of torn ligament, a bunch of astronomical vet bills… something that only B could pull off.

Long story short, we ended up at the vet and left with an antibiotic and some pain meds.  The cause of the problem?  A gland infection.  If you have a dog, you may know what I’m talking about… if you don’t have a dog, you don’t want to know.  So we will just leave it at that, and hope for a speedy recovery for my furry little drama queen.

On a  side note – I’ve heard many people compare dog’s personalities to their owners.  Don’t get me wrong, I love the little B dog more than anything… but she is one sensitive, finicky, little girl.  Should I wonder about what this says about me??

Due to all of this madness, I did not go for my planned run… again.  Life has just not been very conducive to training for this half marathon lately.  And to top it all off my right knee has been hurting when I bend it.  I can only guess that I have been sitting on it weird at work (it’s always the strangest things that cause injuries). Maybe a rest day was just what it needed.

On a brighter note, I received a Fabletics order in the mail and I am pretty pumped about this saweeet headband:

I am a terrible selfie-taker.  But maybe that’s not something to be ashamed of?  The headband is super comfortable and it doesn’t seem to slide around too much.  The only problem is I feel like it’s too nice to work out in!  But I’m sure I will get over that pretty quickly.

The Puppy Snuggle Vortex

Do you ever have days that the alarm goes off, you actually don’t feel terrible about waking up, and then you see the snuggliest little puppy sleeping next to you… and just like that all you want to do is curl up with your pup and stay in bed forever?

Or how about during the day?  You’re knocking out household chores when suddenly you see your sleepy, furry, little friend curled up in a ball on the couch and before you know it you have abandoned all tasks to take a nap?

This, my friends, is what I like to call the Puppy Snuggle Vortex.  And I am a victim.

I got out of bed this morning, miraculously, just to end up sitting on the couch with the B dog, watching the news, and struggling to get moving once again.  The struggle is real.

How am I supposed to get anything done on the weekends when this is what I’m working with:

And now I’m going to use all of my willpower to get off the couch, make some breakfast, and get ready for work (hopefully).

Today on the agenda: out to eat for lunch with a few friends (TBD), wing night!, and hopefully a 4 mile run on the dreadmill to offset all this eating.  I was feeling a little proud of my run on Tuesday.  I increased my mileage and decreased my time since my run last wednesday:

I kind of let my workouts fall through the cracks last week, so I’m making an extra effort to get back on track.  Now if only this ridiculously cold weather would break so I could bring myself to do a long run!
