A Day of Eats + House Rules

Happy hump day friends! We’re half way to the weekend and things are looking up!

Today I am sharing my meals from yesterday, partially to keep me accountable and partially because it’s nice to have ideas when the usual routine gets a little old. 

Breakfast 7:30am – 1 PerfectFit protein pancake with cinnamon, maple syrup, blackberries, and raspberries. (This recipe is from the Tone It Up nutrition plan, which I finally caved and got. I plan to commit 100% and write a full review after the half marathon.)  


Snack 10am – 1 medium grapefruit (I forgot to take a picture)

 Lunch 12:30pm – leftover Easiest Broccoli Pasta. I’m partially following along with the Skinnytaste meal plan this week!
Green tea 1:30pm

Snack 2pm – Coconut Chia Seed Pudding  (also from the Tone It Up nutrition plan) topped with coconut flakes and cacao nibs

Snack 4pm – Cherry pie Larabar (forgot to snap a picture)

Dinner 7pm – Crockpot Chicken and Black Bean Taco Salad

I ended the evening with a mug of warm mint tea and 2 pieces of Dove dark chocolate. 

On a side note, we are currently ‘puppy sitting’ (all dogs will forever be puppies to me) for Kris’ parents for 3 weeks and we’ve had to implement some pretty strict house rules for these houligans… 


It’s sad how much of a kick we get out of our new little catch phrase.

Vegetarian Enchiladas

This week I decided to go out on a limb and attempt one vegetarian dinner (that was not pasta) and I actually killed two birds with one stone. Not only did I find an awesome recipe, but I used up mostly ingredients that I already had on hand. 

The only supplies I had to buy were enchilada sauce, cilantro, avocado, and green onions. The rest I had in the pantry or leftover in the fridge just waiting for the right recipe to come along. 

I found this recipe for vegetable enchiladas  from epicurious and followed the recipe pretty closely. 

The only thing I omitted was the rice, and I used leftover roasted sweet potatoes from Tuesday’s dinner. Then I topped with sour cream, chipotle salsa, and some salsa verde. 

B dog was there for moral support… 


These babies are best prepared with a margarita (or three).

The Many Faces of a (Sassy) German Shorthaired Pointer

Sometimes I find myself scrolling through my phone and looking at all of the ridiculous pictures I have of B, so I figured today I would share some of the cute/crazy/ridiculousness.  She sure has a lot of sass personality.  If you have a GSP, I’m sure you can relate to many of these.

6 Miles and A Day of Eats

Today was finally a nice day in the Great White North!  And then it promptly decided to rain the moment I left work… but at least the temps were not arctic.  So me and the Beester braved some wind and rain drops after work and got our 6 mile training run in!

We averaged under 10 minute miles so I was pretty happy with that… it does make me a little nervous though to think about adding in hills.

I tried to fuel for the run throughout the day by starting with a whole wheat English muffin topped with Almond butter and 2 kiwis on the side:

Followed by 2 cups of coffee drank throughout the morning.  Lunch was the last of the chili and cornbread with a side of black berries and a hard boiled Easter egg.  I packed those darn snap peas every single day this week and still haven’t opened them. For some reason they’re just not doing it for me… maybe tomorrow?

For an afternoon/pre-workout snack I had a cup of tea and a Chobani apple & cinnamon yogurt with steel cut oats:



Dinner was pasta with some wilted spinach and Wegman’s marinara (plus a side of wine):

Tomorrow I plan to take a barre class, do some cleaning and packing, and then we are heading down to Pittsburgh for Easter with my family!

A Fabletics Purchase, A Vet Visit, & Another Missed Run

Yesterday was a roller coaster of a day.  As soon as I woke up I knew something was off with B.  When I left her she did not want to play or eat breakfast and she was whining at me like she was trying to tell me something and I just could not understand.  I feared she may be in pain, but I couldn’t pinpoint a problem.

No, no it doesn’t.  So I planned to come home at lunch and see if she was feeling any better.  She tends to get sassy and boss me around in the morning when she’s not getting enough exercise/attention, so I couldn’t rule that out.  During lunch I got her to eat most of her breakfast and take a lap around the block, but something was still off.  One/both of her back legs seemed to be bothering her, so I took pictures and videos of her walking, but still no real conclusions.

When I got home from work at the end of the day she didn’t even greet me at the door after I called her a couple times.  At this point I was terrified of what I was about to find.  I found her laying on the couch acting like she couldn’t get up (so much relief, and then worry again).  Then I was worrying that we were dealing with some sort of torn ligament, a bunch of astronomical vet bills… something that only B could pull off.

Long story short, we ended up at the vet and left with an antibiotic and some pain meds.  The cause of the problem?  A gland infection.  If you have a dog, you may know what I’m talking about… if you don’t have a dog, you don’t want to know.  So we will just leave it at that, and hope for a speedy recovery for my furry little drama queen.

On a  side note – I’ve heard many people compare dog’s personalities to their owners.  Don’t get me wrong, I love the little B dog more than anything… but she is one sensitive, finicky, little girl.  Should I wonder about what this says about me??

Due to all of this madness, I did not go for my planned run… again.  Life has just not been very conducive to training for this half marathon lately.  And to top it all off my right knee has been hurting when I bend it.  I can only guess that I have been sitting on it weird at work (it’s always the strangest things that cause injuries). Maybe a rest day was just what it needed.

On a brighter note, I received a Fabletics order in the mail and I am pretty pumped about this saweeet headband:


I am a terrible selfie-taker.  But maybe that’s not something to be ashamed of?  The headband is super comfortable and it doesn’t seem to slide around too much.  The only problem is I feel like it’s too nice to work out in!  But I’m sure I will get over that pretty quickly.

The Puppy Snuggle Vortex

Do you ever have days that the alarm goes off, you actually don’t feel terrible about waking up, and then you see the snuggliest little puppy sleeping next to you… and just like that all you want to do is curl up with your pup and stay in bed forever?

Or how about during the day?  You’re knocking out household chores when suddenly you see your sleepy, furry, little friend curled up in a ball on the couch and before you know it you have abandoned all tasks to take a nap?

This, my friends, is what I like to call the Puppy Snuggle Vortex.  And I am a victim.

I got out of bed this morning, miraculously, just to end up sitting on the couch with the B dog, watching the news, and struggling to get moving once again.  The struggle is real.

How am I supposed to get anything done on the weekends when this is what I’m working with:


And now I’m going to use all of my willpower to get off the couch, make some breakfast, and get ready for work (hopefully).

Today on the agenda: out to eat for lunch with a few friends (TBD), wing night!, and hopefully a 4 mile run on the dreadmill to offset all this eating.  I was feeling a little proud of my run on Tuesday.  I increased my mileage and decreased my time since my run last wednesday:



I kind of let my workouts fall through the cracks last week, so I’m making an extra effort to get back on track.  Now if only this ridiculously cold weather would break so I could bring myself to do a long run!

Meal Prep, Sunday Dinner, and The Blacklist

Good morning, and happy Monday! Yesterday was a fairly productive Sunday, we started off the day sipping our morning coffee and watching The Blacklist.  We started watching the series on Netflix a couple days ago and we are completely addicted.  It is so, so good.

I even got my nails painted while we watched.  I decided to switch it up go and with regular polish instead of using my gel kit.  Hopefully I don’t regret it!  The gel lasts so much longer, but I have so many more options with the regular.  Yesterday I was really feeling the Essie color “No more film”.  It felt like a January color to me.


At some point in the afternoon we finally worked up enough will-power to leave The Blacklist and go for a run and do some grocery shopping.

For dinner we made leftover pulled pork, sauerkraut, and roasted baby red potatoes:

I got this new USA Pan for Christmas and it makes a world of difference on the potatoes!


Kris actually made the pulled pork from a pork loin for NYE.  I was completely impressed, because generally I don’t love the consistency of the prepackaged/marinated pork loins.


P.s. this BBQ sauce is amazing.



There were no trips to Bed Bath & Beyond or Home Depot, but it was a nice little Sunday.


For breakfast this morning was half of a whole wheat Wolferman’s English muffin with this awesome new Almond butter I got and a little red raspberry jam:



It needed a little bit of stirring when I opened it, but it has a great taste.

And it went well with half of a grapefruit.


On the lunch menu this week – more chicken & rice kale bowls.  I can’t get enough of them!

And for an afternoon snack today I packed some laughing cow cheese with blue corn tortilla chips and a mandarin orange cup!


Happy Monday!  The Bachelor starts tonight! 🙂

Don’t Step in the Lava

Good morning!

Today is a busy one! Breakfast was a yummy whole grain English Muffin with Justin’s vanilla almond butter and a small glass of OJ. (Shocking, I know… you never saw it coming.)


I guess I may need to switch it up a little bit for the new year.  It’s nearing time for a change, and my almond butter is nearing the bottom of the jar.

I’m rushing around doing some cleaning, last minute shopping, and hoping to squeeze in a run with B. Speaking of the little stinker, she’s been a real help so far this morning (not).

One of my biggest pet peeves is coming home to a messy house, so since today is the big road trip to the great white north, I have a few chores to do. Can you find the little B dog?


Yep. No help at all.


I’m pretty sure everyone as a kid played the age old game where the floor is lava.  Am I right? And it was an awesome game.  Well, B has the lava complex (and while it’s comical, it’s not all that awesome).  Yesterday she got herself stuck in the bathroom on the shower mat, because she thought that she couldn’t cross the lava to get to the carpet outside of the bathroom (it’s maybe a 3 ft space). I went downstairs thinking she would just manage to escape on her own, but she sat on that shower mat and whined at me until I came and got her. She is literally her own worst enemy. Once she realizes she has bolted onto an uncarpeted floor she immediately panics and suddenly starts slipping all over the place.  She is lucky she’s so darn cute.

My 60 lb Dog Thinks She’s a Pug

Why, hello! I hope you’re having a great hump day!

I think the title of this post pretty much explains it all.  But first, let me give you a little background on my crazy fur child. This is ‘B’ – short for Bianka.  Also goes by Busy B, B dog, and BEEBEE (in a high-pitched voice that could probably shatter bullet-proof glass). She’s a 6 year old German Shorthaired Pointer with enough energy to outrun any human being for days, a huge attitude, and special place in my heart. If you’re ever thinking about getting a German Shorthair you will need:

1. endless space,

2. limitless energy,

3. probably a small village to help out,

but they are unlike any other!

Leave me alone, mom! I’m so sleepy and cute

B enjoys normal activities, like helping in the kitchen:

(Yes, there they are in all their glory.) Bear is my parents’ puggle (Pug + Beagle), and B’s puppy brother (or I guess technically maybe my puppy brother?)

Either way, things get pretty interesting when your dog doesn’t realize her size, often times leading to a path of mass destruction (and in my case, a hairline fracture in your front tooth).  Incase you were wondering, that is probably the best case scenario when your dog comes jumping out of the car full-force into your face.

So there you have it. She is a real handful (literally), but I wouldn’t have her any other way.
