My Week Long Hiatus

Happy Monday, my friends! I hope your week is off to a great start.  Last week I decided to take a break from the blog because, to be honest, I was exhausted.  I’m hoping to get back at it this week because I certainly don’t want to give it up, but it’s very difficult for me to come up with good blog topics after a long day.  So here is a little snapshot of the last week:

I went to a few Pure Barre classes:


We scored awesome seats to a Pens vs Sabres game:



The weather finally broke (Spring is here!!):


Runs were completed:


We took a trip to Pittsburgh this weekend to run the Pirates 5k and go to a surprise birthday party:



And now it’s time to get on the road for another work week, and it’s Boston Marathon day!  Have a good one!


Sabra Hummus Recall and Thursday Eats

Happy Thursday, my friends!

Yesterday after work I was snacking on some delicious pine nut hummus and tortilla chips with strawberries (and also having an intense game of ball) before Pure Barre…



Which was all well and good… until I woke up this morning and saw that there is a recall on Sabra hummus for listeria.  Chances are it’s probably fine, and it appears to be affecting the “classic” hummus… but not the best morning news.  Whoops!

On the menu:

Breakfast – whole grain English muffin with Almond butter and strawberries


Lunch – chicken salad with mustard as dressing, a side of strawberries, a carbonated water, and some dark chocolate


Snack – green tea with cranberry Chobani & steel cut oats


Dinner – leftover pork tenderloin with sauerkraut and BBQ sauce:

(I promise it tastes better than it looks).  I’m planning to do a long run this evening but the weather just doesn’t want to cooperate, so we shall see!  On the bright side, it officially feels like spring in Buffalo!

Pure Barre + Steak Salads

Happy hump day!!  I hope your week is going well, we are inching closer to Friday (thank goodness!).

Monday evening I went to my second Pure Barre class and holy crap, I am still feeling the burn.  I really enjoyed the class, even though I was shaking like a leaf the whole time.  The instructor was super nice and on my first day she told me that if I stick with it for at least 3 days a week over the next month (the length of my Groupon) I will start to see some changes… so stay tuned.

While I was at the barre class, Kris was in charge of dinner… and he nailed it.  He grilled up a steak, roasted some baby red potatoes, and sliced some veggies for a delicious steak salad.


The dressing was a drizzle of this yogurt blue cheese and balsamic vinegar (such a great combination):


Yesterday was super busy and I didn’t make my 6 mile run.  I’m struggling with adjusting to my new routine (and the still colder weather) and it’s really hindering my half marathon training.  Since I was feeling disappointed in myself, I made it a point to get all of my other items completed from my to-do list.  So I wouldn’t call it a complete bust.  Just getting random paperwork, bills, and taxes out of the way really relieves the stress that overwhelms me sometimes.

Breakfast this morning was the usual:


Last night for dinner we roasted another chicken from Wegman’s and some asparagus.  I used the leftovers to construct a chicken salad for lunch today.  In the salad: kale, baby spinach, chicken, asparagus, cherry tomatoes, cucumbers, mustard as dressing:


With a side of strawberries and a mint-lime carbonated water, and 2 pieces of Bliss dark chocolate.

Afternoon snack is a cup of tea and the usual Chobani yogurt:

Easter Sunday Detox Monday

Happy Monday!  I hope you had a wonderful Easter weekend filled with fun, family and sweets (maybe even a little sunshine??)!

On Friday afternoon we headed down to Pittsburgh for a weekend of family time and so. much. food.  Friday night we ate at Anthony’s Coal Fire Pizza and it was delicious.  I LOVE their pizza covered in arugula mmmmm.

Saturday evening we all got together for a family meal.  Mom made lasagna and everyone seemed to have desserts on the brain because we ate ALL of the desserts.


My brother brought these ridiculously cute and delicious mini cupcakes:


My sister and her boyfriend brought an almond torte cake from Prantil’s:


And my mom got an Angel food cake with sliced strawberries.  So I think it’s safe to say we did Easter right.

Yesterday we went to church with my grandma followed by lunch at her house:


So I think it’s safe to say that a detox is needed today.

For breakfast I had my usual whole grain English muffin with 2 kiwis and almond butter:

For lunch I packed a kale and baby spinach salad with dried cherries, walnuts, cheese, and some olive oil and balsamic vinegar:

For a snack I packed a hard boiled egg and a Chobani yogurt.

6 Miles and A Day of Eats

Today was finally a nice day in the Great White North!  And then it promptly decided to rain the moment I left work… but at least the temps were not arctic.  So me and the Beester braved some wind and rain drops after work and got our 6 mile training run in!

We averaged under 10 minute miles so I was pretty happy with that… it does make me a little nervous though to think about adding in hills.

I tried to fuel for the run throughout the day by starting with a whole wheat English muffin topped with Almond butter and 2 kiwis on the side:

Followed by 2 cups of coffee drank throughout the morning.  Lunch was the last of the chili and cornbread with a side of black berries and a hard boiled Easter egg.  I packed those darn snap peas every single day this week and still haven’t opened them. For some reason they’re just not doing it for me… maybe tomorrow?

For an afternoon/pre-workout snack I had a cup of tea and a Chobani apple & cinnamon yogurt with steel cut oats:



Dinner was pasta with some wilted spinach and Wegman’s marinara (plus a side of wine):

Tomorrow I plan to take a barre class, do some cleaning and packing, and then we are heading down to Pittsburgh for Easter with my family!

A Few Things That are Making me Smile

Happy hump day, my friends!

Today was an odd day.  Nothing was exactly bad about it, but it felt long and exhausting and I was grateful for the little things that made me smile.  So I thought I would share them with you 🙂

1. Tomorrow is ‘Friday’

Thank goodness for the 3 day weekend, family time, and a chance to recoup.

2. This adorable new purchase that I found at TJ Maxx for $10


The colors and the saying spoke to me just perfectly.

3. This super healthy dinner


Kris knew I was having a rough day so he graciously poured me a glass of wine when I got home.  Then he cut up all of our Easter eggs for egg salad which I ate straight out of the bowl with a side of tortilla chips and french onion dip.  I’m not proud.  Although last night I had chips, french onion dip, and jelly beans for dinner.  So I think it’s safe to say that I’ve used up all of my “new job and life, stress eating” free passes.

4. Leftover chili and cornbread for lunch with the juiciest blackberries EVER


5. Wegman’s chocolate cherry trail mix


Caution: you will want to eat the whole bag in one sitting.

6. B snuggles


B always knows when I’ve had a rough day or when I’m feeling sad.  She sure knows how to press my buttons sometimes, but she always knows when I need some extra loving.  She also knows when I’m taking her picture and likes to attack the camera.  Luckily I snuck one in before the attack.  AND she ate both breakfast and dinner today!

7. Emails & texts from old coworkers/friends

I received some texts and emails this week from my old coworkers that made me smile.

8. This SNL Serial skit

If you have not listened to the Serial podcast, you need to stop what you’re doing and start listening.  And then you should probably plan to accomplish nothing for the next 8-10 hrs.  I have listened to the podcast series almost twice now, and I still can’t get enough.  It’s the best thing to happen to road trips since satellite radio  Yesterday Kris sent me the SNL skit based on the podcast and it was too good.  If you’ve listened, you have to see this:
