Last week I made a great discovery in the meat section of the grocery store – pre-made Chili Lime Chicken Burgers.
I actually wasn’t looking for them, but they found me. So I froze them for a week and busted them out just in time to finish up this week’s dinners (and lunches). I made them in a skillet because I didn’t feel like firing up the grill and they turned out great.
This is a true lazy/healthy dinner. After the chicken burgers were done I tossed some fresh asparagus, olive oil, salt + pepper, and a fresh squeezed lemon into the frying pan to cook up. Then I finished it off with a huge squirt of Heinz tomato ketchup,
because I’m fancy.
And just incase you were wondering I
definitely did not tuck B into bed like a person last night.
This morning I rolled out of bed nice and early (ok, maybe B woke me up to go outside nice and early) and I was starving. So I promptly made some coffee and this super filling breakfast of oatmeal, peanut butter, almond milk, and so many berries:
Sprinkle with a healthy dose of cinnamon, enjoy!
Side note – I think B has a bright future with the circus… 60 lbs has never looked to tiny!
