Salmon with Roasted Potatoes and Brussels Sprout Slaw

Good Morning! I have an awesome and easy recipe to share with you on this hump day.  Last night I made some delicious and nutritious salmon.

I bought this big guy frozen from the Giant Eagle Market District (I love that place) on Monday.  When I got home I put it straight in the fridge to thaw and it was ready for cooking by Tuesday evening!

Sesame Salmon

Ingredients:

– salmon, skin on

– sesame oil

– garlic salt

– brown sugar

– salt

– pepper

Place salmon skin side down in an oven friendly dish. I didn’t measure anything out, I just drizzled the sesame oil and coated the salmon, then I sprinkled the rest of the ingredients on, and it came out looking like this:

I cooked at 450 F for approx. 18-20 minutes, but if you have a smaller piece I would suggest 12-14 minutes.

Next up – oven roasted potatoes! (you may actually want to start these first, they take a little longer).

Oven Roasted Potatoes

Ingredients:

– Potatoes (any kind will do)

– olive oil

– garlic salt

-salt

– pepper

Slice up potatoes into smaller chunks, drizzle olive oil and sprinkle dry ingredients on top, then mix in a bowl with your hand:

Spread out onto a cookie sheet (greased with cooking spray or olive oil) and give them another dusting of the salt/pepper/garlic salt:

Bake at 450 F for 20 minutes, flip and bake for another 15-20 mins.

And finally, I made some Brussel Sprout Slaw to get in a healthy dose of veggies.

Brussels Sprout Slaw

Ingredients:

– brussels sprouts

– olive oil

– 1/2 lemon

– salt

– pepper

Cut the brussels sprouts into thin slices until you get to the stem (if you’re not sure where to stop – the stem is much tougher and won’t shred as easily if you try to pull it apart):

Once you are done slicing, toss the sprout slices in the olive oil, half of a lemon’s juice, and salt and pepper to taste.

And there is enough for leftovers which means I don’t have to worry about cooking again tonight 🙂
