Happy Friday!! We finally made it.
Last night when I got home I had a
glass couple glasses of wine and got really lazy when it came to making dinner. I also didn’t have a plan, or any supplies lined up, so I came up with this quick recipe that actually turned out to be quite delicious!
15 Minute Caprese Pasta
– Pasta of your choice (I used whole grain linguine)
– 2 Tomatoes
– 1/2 fresh mozzarella ball
– Garlic Powder
– Olive oil
– Crushed Red Pepper
– Fresh basil (I didn’t have any but I think this would be a great addition)
Boil water (add some salt to heat things up faster) and add pasta (cook as directed on box instructions). While pasta is boiling, chop up tomatoes and mozzarella. Drain pasta and put back in pot. Drizzle with olive oil then season to taste with garlic salt, crushed red pepper, salt, & pepper. (Remember – you can always add more, but you can’t take away – crushed red pepper brings the heat!)
Add in the tomatoes and mozzarella and stir! (you may want to heat for a few minutes on the stovetop if you want the cheese to get melty and delicious):
Enjoy with a glass of wine (or two)!
It’s also best enjoyed while watching a Christmas classic 🙂
