I finally made it grocery shopping last night and did some meal prep (no more leftover pizza and thanksgiving foods – as much as I hold them both near to my heart). On the menu today:
Breakfast – whole grain English Muffin with Justin’s vanilla almond butter and a small glass of orange juice
Lunch – I stumbled across what is shaping up to be my new favorite food blog – Iowa Girl Eats. I did a few modifications to this Kale and Wild Rice bowl recipe, but it turned out amazing. First of all – cooking the rice in chicken broth was a brilliant idea, it added so much flavor! I made the rice and chicken last night and packed ’em up for easy lunch packing this week. This morning I filled a tupperware container with kale, added the chicken and rice toppings, some dried cherries, sliced almonds, and cut up a honey-crisp apple (I forgot the goat cheese, but you better believe I’ll be adding it tomorrow). For the dressing I just drizzled some olive oil, balsamic vinegar, and honey on top. The picture doesn’t do it nearly enough justice.

Dinner – for dinner I happen to be making another fine selection from the same place, Crockpot Italian Beef Sandwiches. I have these babies cooking in the crock pot and I’m really looking forward to how they turn out. Depending on how hungry I am feeling, I may skip the bun and put a big helping on top of some spinach and arugula. The possibilities are endless!!
If that doesn’t get you excited for dinner, I don’t know what does.
Workout – this morning I woke up bright and early for a 5:45am spinning class
But, on to the more exciting part of my day… tonight I am learning how to walk dogs at a local animal shelter! OK, I am probably more than qualified… I wrangle the B dog regularly. However, this shelter is very strict about who can handle their animals and I respect that process. No one wants to see one of the dogs get hurt or go missing if it could have been prevented. A couple weeks ago I went to volunteer orientation and began volunteering with the bunnies (yes, they have bunnies!!). I could go on and on about random bunny facts, (did you know bunnies can be litter-trained, they poop nearly 260 times a day, and they can be certified therapy pets??) but maybe that’s for another post. So needless to say, I’m pretty excited that after tonight’s class I will be able to go walk the dogs!
